Zuppa Fredda di Pomodoro Giallo e Mais Dolce (Veneto) A refreshing summer chilled soup inspired by the Italian countryside, featuring Silverman’s Farm yellow tomatoes, sweet corn, shallots, fresh basil, and extra virgin olive oil.
INSALATA
Insalata di Rucola e Spinaci (Salerno e Catania) Fresh arugula and baby spinach tossed with shaved fennel, sweet cherry tomatoes, and Parmigiano-Reggiano, finished with a lemon-peach vinaigrette.
PRIMO
Gemelli all’Amatriciana (Amatrice, Lazio) Gemelli pasta tossed in a rich sauce made from Silverman’s Farm tomatoes, Shaggy Coo’s Farm guanciale (cured pork check), sweet onions, garlic, Pecorino Romano, red pepper flakes, and fresh herbs.
DOLCE
Sfinge Siciliane (Palermo, Sicily) Traditional Sicilian ricotta doughnuts, lightly fried and drizied with Silverman’s Farm local honey.
